This is a great way to bring out the best flavour, in early or slightly under-ripe fruit.

Cut your strawbs into equal sized pieces. Get your skillet nice & hot, add a knob of butter, then throw in the berries, & cook on high for a short time, tossing the pan regularly. You can add sugar to taste, or a dash of apple syrup or liquer. Don’t cook them to a mush, just heat through.

Delicious served with little nutty shortbread biscuits & creme fraiche or thick yoghurt.

Also good way to cook stone fruit, & very quick, ideal for improvised desserts!
