This is one of the recipes we invented to cook in the pizza oven, although it would be equally delicious cooked in the oven, or in a hooded bar b q.

We make our own bases (I won’t put the details in here, many recipe books will tell you how.) but you could cheat & buy pre-made bases.  If you make your own bases, start them an hour or so in advance.

Firstly chop up some chicken, smallish pieces are easier to distribute, (one breast will make 2 medium pizzas) add about 1 dsp of Tandoori paste, & mix thoroughly. Cover & put in fridge while you prepare the other ingredients.

Then peel & cube 2 cups of  sweet pumpkin, into about 2cm cubes, sprinkle with chopped garlic & olive oil, & rub with your hands to coat evenly. Pop into a hot oven for about 10 mins.

Spread the base with a little sun-dried tomato pesto, then add dobs of hummus. Sprinkle with finely chopped onion, 1 dsp.chopped fresh coriander, the marinated chicken, pumpkin & cubes of fetta.Chopped Pepperdew peppers add a bit of kick. Lightly cover with grated cheese, colby is fine. Cook until golden & bubbling, about 10-15 mins in oven, pizza oven you just have to check regularly.  Serve with fresh green salad.
