We started making our own Granola about a year ago, because we found the bought stuff too sweet, & too expensive! This recipe makes enough to fill 3-4 two litre jars, it lasts Geoff & I a month or so, & we usually give some to one or other of our kids as well. We gather the ingredients from several places. It takes about1 1/2 hours to make, but most of this time is just being around to stir it. 8 cups rolled oats, 8 cups mixed flakes, we like Quinoa, barley, buckwheat & puffed millet, too much fine stuff makes it a bit floury. 2 cups shredded coconut, 6 cups mixed seeds & nuts (slivered almonds, sesame, pumpkin & sunflower works well)Mix all of the above in a LARGE bowl, we use a white washing up bowl, we keep just for food. Put the oven on to 120-150C. 1 cup Oil of your choice, we use Rice Bran, but Sunflower or similar would be good 3tblsp Honey, 2 tsp vanilla essence. Warm honey if need be so that it is runny, mix with oil & Vanilla, then stir through the dry mix, use your hands to mix thoroughly. Spread mix onto roasting dishes, & pop in the oven.Stir every 20 mins or so, until it’s the colour you like, usually takes about an hour. I use my trusty timer to remind me, it’s awful burning bulk recipes

(Update: we’ve stopped putting dried fruit in, both to save money & because we always have fresh or cooked fruit from the gardens to have with our granola. We also stir in a couple of tablespoons of ground Linseed &  whole Chia seeds once it’s cooled.)

Let cool, then mix in 6 cups dried fruit (our favourite mix is cranberries, chopped apricots & dried diced apple, sultanas etc make it too sweet.)Of course you can adapt this recipe to suit your own tastes, sweeter, no coconut, whatever.Delicious with slightly sweetened greek yoghurt, & seasonal fruit, & it keeps you going until morning teatime!
